I am kind of a last minute person so this usually results in preparing dinner with stuff I already have in the house. Using our wild caught sockeye salmon and rice as a side dish so today I am making Miso Glazed Salmon with rice. I have tried this recipe before without the miso paste and it also tastes great, but of course I do like to follow recipes so if you have it make sure to add it!
Miso Glazed Salmon
Ingredients
- 2 pounds salmon, sliced into four filets
- salt and pepper
- 1/4 cup miso paste
- 2 Tablespoons Soy Sauce
- 1 Tablespoon brown sugar
- 1 Tablespoon rice vinegar
- 1 teaspoon sesame oil
- Chopped green onions and sesame seeds for garnish

Salt and pepper the salmon.

In a small bowl add the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil. Wisk together until smooth. Reserve 1 tablespoon of marinade.

Cut your fillet into serving size of 3oz each. Preferred to leave skin-on (this holds all the flavor!)

In a medium sized bowl add the salmon and the sauce. Let it marinade for 1-3 hours.

Preheat oven to 375 degrees. In a large skillet add the salmon and discard marinade. Bake for 12-15 minutes, or until fish is almost done and opaque. Brush with reserved glaze and Broil on high for 1-2 minutes until fish reaches 125-130 degrees in the center.
- Garnish with green onions and sesame seeds.
